Our Sirloin Filets are similar to the New York Strips, but cut from a different part of the steer. Elite Specialty Meats come from the finest Mid-Western grain-fed steer. They are hand selected, wet aged 20-28 days, cut by master meat cutters and marbled to Excellence! Our Sirloin filets are “Center Cuts” and rated by the USDA in the top 2% of all sirloins in the country! Choose from any of our three product grades. USDA Prime, USDA Choice, or USDA Select Lean Line (all the pleasure without the guilt. High in protein with 30-40% less calories).
